Fresh Lobster Roll with Parmigiano Reggiano® DOP

Lobster Roll with Parmigiano Reggiano DOP

INGREDIENTS

1 market-size lobster (about 1.75 lbs)

1/2 cup mayonnaise

2 tbsp chopped chives

4 hot dog buns

Butter, to coat

3.5 oz 18-month Parmigiano-Reggiano® DOP cheese

1 cup shredded lettuce

Bring a large pot of water to a boil. Add the lobster and return the pot to a boil. Reduce to a simmer and cook for 12–15 minutes, until the shell is bright red and the meat is opaque. Remove from the pot and let cool.

Once cool, crack and clean the lobster, removing any innards. Finely chop the meat and add to a large bowl. Mix in the mayonnaise and chives and season with salt and pepper.

Heat a grill pan over medium heat and brush with butter. Separate the hot dog buns and place the buns open-side-down onto the grill. Toast the buns for 1–2 minutes, until browned.

Divide the lettuce, lobster, and Parmigiano Reggiano® DOP among the toasted buns. Serve with French fries or coleslaw, if desired.
